In 2019, in the midst of the Covid-19 pandemic, Jon Bussell began pickling to complement his charcuterie business. He was soon won over to the power of ferments and so Acide™ was born.
A commitment to flavour, preserving the seasons and reducing food waste are at the heart of the Acide™ philosophy.
The freshest fennel bulbs are sliced finely, and then added to a sharp, herb-laced brine of fennel seed, mustard, garlic and a hint of sweetness. The result, a light but punchy, zesty but smooth pickle.
Serve with seafood, salads or eat as a healthy snack.
