Description
Mace is extracted from the Nutmeg fruit. When the fruit is cut open, the bright red lacy layer of mace that surrounds the inner nutmeg is revealed. The mace is then peeled off and dried.
Although the aroma of mace is reminiscent of nutmeg, mace is not generally used in sweet dishes like nutmeg. A few blades of mace complement the flavour of steamed fish and vegetables.
